Zuppa Toscana Soup Recipe

Tis the season for making soups.  I love to make big batches of them in the crockpot.  Actually I like anything that I can make in the crockpot.

This soup’s original recipe you can find here.  I found it to be a bit time consuming as far as prep work but the results were delicious.  And knowing that every ingredient I put in there was fresh puts a smile on my face.  I also adjusted the amounts in order to make enough for 6 people and have some left over.

The recipe I followed didn’t say anything about what to do with the bacon and so I used it as a topping at the end but the next time I make the soup I will put the bacon in upon putting the cream ingredient in.

I cut up my onion and threw it in while I cooked the sausage so that it would soak up all the yummy flavor from the sausage cooking.

I also added a couple tablespoons each of basil and oregano to the simmering meat and broth.

I added the creamy mixture and kale in about an hour before serving.  The recipe calls for only 30 minutes but I felt the kale needed a bit longer to cook.

For toppings with the soup I did the bacon, green onions, and parmesan cheese. 😋

I served with toasted parmesan buttered bread and a fresh salad.
